2 1/2 cups oats-
regular or thick cut
1 cup shredded coconut- preferably unsweetened
1/2 cup sliced raw almonds
1/2 cup sesame seeds
1/2 cup wheat germ
1/2 cup shelled raw sunflower seeds
1/3 cup honey
1/4 cup canola oil
1/2 cup Craisins or raisins
In a bowl, stir together oats, coconut, almonds, sesame seeds, wheat
germ and sunflower seeds. Combine honey and oil, stir with a whisk until
well combined. Stir this into oat mixture. Spread out evenly on a jelly
roll pan coated with cooking spray. Convection 300 degrees or bake 325
degrees approximately 35 minutes until light brown, shaking pan gently
once during baking time.
Remove from oven, stir in Craisins or raisins. Cool, store in tightly
covered containers. Makes about 6 1/2 cups.
