| Zucchini Casserole
2lb zucchini
1 large onion
2 eggs
1/2 cup milk
1/2 cup jack cheese
1/2 to 1 cup grated parmesan cheese
1 tablespoon butter
10 Akmak crackers (10 smaller rectangles you get when you break the
larger sheets
salt and pepper
Shred zucchini
and onion with food processor or hand grater. Put in glass dish,
cover and microwave for a few minutes until tender, drain. Beat eggs
and blend with milk, pour over veggies. Food process or hand crumble
Akmak crackers. Add to veggies along with cheeses, salt and pepper.
Smooth into Pyrex dish coated with cooking spray. Dot with butter.
Convection bake at 350 degrees. Check after 35 minutes. Casserole is
done when eggs are set and top is golden brown. |
