Portuguese Beans

2 cups pinto beans
4 cups water
1/4 lb salt pork - diced
1 onion chopped
2 cloves garlic - chopped
1 1/2 cups tomato sauce
1/2 teaspoon ground red pepper
1/8 teaspoon cinnamon
1 bay leaf

Wash beans and soak overnight. Boil for about 10 minutes, then simmer for about an hour until beans are soft. In a Dutch oven , fry salt pork on medium heat and then drain.  Add onions and garlic to salt pork and sauté until soft. Add beans and a bit of the water, and all the rest of the ingredients. Bring to a low boil briefly, then turn down to lowest simmer for an hour or more. Makes for to six large servings.
