| Pork Loin Roast
Pork Loin roast - approx 4lbs
1/3 cup dijon mustard
2 T sugar
1 teaspoon celery seed
1 teaspoon sage
1 teaspoon salt
1/2 teaspoon pepperThe night before:
Coat the roast with Dijon. Combine all dry ingredients and pat onto
roast over mustard. Refrigerate.
Preheat Trivection to Convection
Roast 325 degrees. On broiler pan with rack, convection roast for 22
minutes per pound, so a 4lb roast would be approximately 1 1/2
hours. When internal temperature reaches 160 degrees remove from
oven, cover and let rest to reach 170 degrees. |
