Quesadillas with Pear Salsa
Pear Salsa:
4 cups chopped peeled pears -
about 4 pears
1/3 cup chopped red onion
2 tablespoons chopped fresh
mint
1 tablespoon grated lime rind
2 tablespoons fresh lime juice
1 teaspoon sugar
1/2 teaspoon fresh ground
pepper
1/2 jalapeno pepper, seeded
and finely chopped
Quesadillas:
8 eight inch tortillas
2 cups (8oz) shredded jack
cheese
1/3 cup chopped green onions
To prepare salsa, combine
first 8 ingredients in a bowl; cover and chill.
Cook quesadillas on medium
griddle, top with salsa. |
