Chicken Quesadilla

4 boneless, skinless chicken breasts - cooked (can be done in Trivection on Speedbake in just 10 minutes)
1 bunch cilantro - chopped
1 yellow onion - chopped and lightly sautéed
1 cup finely shredded cheese - jack, or Mexican blend
10-15 burrito size flour tortillas

Coarsely chop the chicken and mix with the cilantro, onion, cheese. Heat the griddle to 350 degrees, add filling, fold and cook until cheese melted, and tortilla lightly browned. Cut in wedges to serve as appetizer, or serve whole with guacamole and sour cream as a meal.
