| Quesadillas
1 cup diced cooked chicken
2 cups (8 ounces) shredded
Mexican blend cheese
1/2 cup chopped green onions
1/4 cup chopped fresh cilantro
1/4 cup diced bell peppers
8 flour tortillas
Place first four ingredients
in mixing bowl. Stir to combine ingredients. Preheat griddle to
medium-high for 5 to 8 minutes. To prepare Quesadillas, place
tortillas on hot griddle. Top each tortilla with enough of the
cheese mixture to cover the tortilla. Top with a second tortillas
and cook approximately 2 to 3 minutes on each side until lightly
browned. Remove from griddle. To serve, cut tortillas into sixths
and serve with your favorite salsa, or garnish with guacamole and
sour cream.
