| Crab and
Parmesan Toasts
1/2 pound crab meat
1 1/4 cups mayonnaise
1 cup freshly grated Parmesan cheese
1/4 cup chopped green onions
2 teaspoons fresh lemon juice
1/8 teaspoon cayenne pepper
Dash of salt
1 tablespoon minced pimiento or sun-dried tomato (optional)
38 baguette or other bread slices, cut about 3/8-inch thick Place crab in a fine sieve to
drain. Pick through the crab and discard and bits of shell or
cartilage. In a medium bowl, combine mayonnaise, Parmesan cheese,
green onions, lemon juice, cayenne, and salt. Mix until well
blended. Fold in pimiento and crab. Preheat Dacor oven broiler. lay
baguette slices in a single layer on a baking sheet and spread each
evenly with about 1 tablespoon of crab mixture. Broil until topping
is golden brown and bubbly-hot. Serve warm. Makes 36. |
